Pecorino Gran Sardo is the flagship cheese produced by the Cooperative Pastors of Allevatori Ovini.

Pecorino Sardo is an uncooked hard cheese made from fresh whole sheep's milk curdled using lamb rennet. The mixture is poured into moulds that will give the cheese its characteristic shape - later the moulds are lightly smoked and left to ripen in cool cellars in central Sardinia.

Pecorino Sardo is richer while Pecorino Romano is much more biting and salty. Pecorino Sardo is delicious in contexts where the Romano could overpower, such as in pesto - the Ligurian pesto alla genovese is traditionally made with a mixture of Pecorino Sardo and Parmigiano-Reggiano.

This cheese is available in a number of weights to meet your needs.

We hand slice our cheeses and though we try our best to deliver the precise weight selected, the nature of cheese and their variable density can lead to variations in sizes.

In the instance that the hand cut cheese weight is greater than that advertised, we will not pass the additional charge on.

In the instance that the weight of the sliced cheese is significantly less than the advertised weight, we will at our discretion provide you with a voucher to cover the difference for your next shop.
