The burratina is a little burrata, a creamy cheese with an heart of stracciatella. It’s made by a layer of spoon paste, stuffed and closed on the top. In the one without tuft ("ciuffo" in Italian) the surplus is stung. It is, nowadays, considered the most delicious product of Apulian dairy production.

Serving
To enjoy the full flavour of the burrata, consume on or within a few days of delivery at room temperature. A secret tip from our cheese maker: take the burrata out of the fridge, immerse the sealed container into a tub of 30-40 degree Celsius water and wait until the burrata warms to room temperature. Take the burrata out of the tub, unseal the container and serve.
