Grana Padano is a traditional Italian hard cheese produced from semi-skimmed cow's milk. It has a wonderful aroma with hints of caramel and butterscotch, and a thick rind which is dark straw coloured. The interior is pale butter in colour and densely packed, with no holes or eyes.
The name comes from the noun grana ('grain'), which refers to the distinctively grainy texture of the cheese, and the adjective Padano, which refers to the valley Pianura Padana. Though similar to Parmigiano Reggiano, the younger Grana Padano cheeses are less crumbly, with a milder flavour.
