Ricotta di Bufala (125g)

Ricotta di Bufala is a rich fresh cheese, slightly grainy in texture but smoother than cottage cheese. It is white, moist with a slightly sweet flavour and is made from the whey of buffalo milk drained off while making cheeses such as mozzarella and provoletta. Ricotta means 'recooked' as this cheese is made by heating the whey from another cooked cheese.

Ricotta is a popular ingredient in many Italian savory preparations like lasagna and stuffed pastas, as well as desserts like cassata and cheesecake.
