To prepare the mozzarella in carrozza, start by cutting the slices of pancarrè, removing the crust. Slice the mozzarella and place it on top of the slices of pancarrè to cover the entire surface, but without letting it spill out. Salt and cover each slice with another slice of pancarrè. Then press gently with your hands to compact the sandwiches.
Cut the sandwiches in half on the diagonal, to form triangles.
Break the eggs into a baking dish, add a pinch of salt and beat them with a whisk for a few minutes.
Add the breadcrumbs to a shallow dish. Dip both sides of each piece of bread in the egg to fully coat. Then dip the bread in the breadcrumbs.
Pour the oil into a pan and bring it to a maximum temperature of 170-180°. Fry a few pieces at a time and cook the mozzarella in carrozza for 1-2 minutes, turning them from time to time.
When they are golden brown, drain them from the oil and transfer them to a tray lined with paper towels to remove the excess oil.
Your mozzarella in carrozza is ready to be enjoyed!
