Pure sheep milk cheese with a minimum of 3 months ageing. The black crust honours the custom of encasing the cheese with olive oil mixed with ash in order to mantain its flavour. The cheese is white, crumbly and slightly rough with delicious, full aroma. It matures faster due to its smaller size.
