Mafaldine are a flat and wide (about 1 cm) pasta with wavy edges on both sides. A characteristic of this format of pasta is the difference of texture between the straight central part and the curled edges. Mafaldine were named in honour of Princess Mafalda of Savoy. Mafaldine are prepared only with the best durum wheat and water.
