Vinified in stainless steel at a carefully controlled temperature, this wine is made from hand-picked grapes that are gently pressed with nitrogen and undergo cold maceration for two hours. Fermentation is conducted at a low temperature with specially selected yeasts to produce an alcoholic, non-malolactic wine. The wine is then aged in stainless steel tanks at low temperatures, with regular bâtonnage using special mixers until April/May. The wine is stabilized using a physical, cold process.
