Bucatini, according to tradition, originated in Sicily, but over the centuries bucatini have become the stars of the national scene. They are famous for their gricia, cacio e pepe, or carbonara dishes, but they are best served with amatriciana sauce. This typical Rieti recipe is only at its best when it meets his majesty the Bucatino. Bucatini are full-bodied and, thanks to the bronze wire-drawing process, manage to capture the succulent sauce.
