Mortadella of Bologna is the best-known of the Italian mortadellas and is protected by the PGI (Protected Geographical Indication) mark and is made using a mixture of the best pork, finely ground pork rind and pork fat. To this is added salt, black pepper, herbs and spices. Once it has been cooked, the resulting sausage has a full well-balanced flavour. It has a unique fragrant aroma, a classic delicate taste and is an intense pink.
