Mortadella of Bologna is the best-known of the Italian mortadellas and is protected by the PGI (Protected Geographical Indication) mark. This is a half piece of mortadella made using a mixture of the best pork, finely ground pork rind and pork fat. To this is added salt, pistachios, black pepper, herbs and spices. It has a unique fragrant aroma, a classic delicate taste and is an intense pink.
