Mozzarella di Bufala (or Buffalo mozzarella) is the connoisseur's soft cheese of choice and is assigned DOP protection for its artisanal manufacturing process. This buffalo mozzarella is a fresh, handmade cheese, originally from southern Italy, made by the 'pasta filata' method. The term is used for several kinds of Italian cheeses that are made using spinning and then cutting hence the name, as the Italian verb mozzare means "to cut".
La Contadina was founded in 1950 as a company dedicated exclusively to the breeding buffalo, based in Borgo Appius, between the towns of Capua, Mondragone, and Aversa, native places for Mozzarella from the beginning of the century.
