Produced using only top quality Italian pork in full respect of PDO (Protected Designation of Origin) process. The Pancetta is massaged with a mixture of salt and spices; it is then tied and left to dry in special rooms for 7 days; after which the pancetta is transferred to aging rooms. Then it is matured.
Product Characteristics: the slice is compact and homogeneous, of a bright red color, interspersed with the white of the fatty parts. Sweet and characteristic taste that is refined with the progress of maturation.
