Exceptional product and deserved winner of a Silver Medal at the 2018 World Cheese Awards. This Pecorino Toscano Oro Antico is made using only pasteurised sheep milk which is then matured for over 4 months during which the crust is rubbed with olive oil. The paste is hard and grainy and the taste is persistent but sweet and palatable, with variegated and well balanced flavours. This product has a Protected Designation of Origin Mark.
