Tuscan Salame (avg. 500g)

Salame Toscano (or Tuscan Salame) is a classic cold salame that will work very well as an antipasto or at a picnic. Cuts are prepared from the leg, shoulder and neck - these are mixed with bacon from the dorsal region before seasoning with salt, peppercorns, black pepper, sea salt and red wine.

This recipe is drawn from a manuscript dated from 1772.
