Carnaroli is a long-grain superfine rice. Ideal for creamy risottos and timbales because of its resistance to overcooking. Carnaroli is the preferred risotto rice in most Italian regions and is often referred to as the "king" or "caviar" of Italian rices. It produces the creamiest risotto and is more resistant to overcooking compared to the more common Arborio.
