Linguine are the Ligurian long pasta format par excellence: shaped like a small, flat, narrow noodle, they were born to accompany traditional pesto. Thanks to their flattened section and slightly convex shape, they are perfect for capturing the sauce and bringing out all its variety of flavours. They are excellent simply with butter and sage or combined with fresh tomato-based sauces, with vegetables and herbs, or with spicy quick sauces prepared with extra virgin olive oil, garlic, chilli peppers, anchovies and capers. They are also ideal for fish sauces with shellfish and seafood and with 'white' sauces prepared with cream, mascarpone, soft and melted cheeses and with the addition of spices such as saffron, horseradish, curry and ginger.
