Among the innumerable versions of maccherone, it seems that Sedani originated in Naples in a smooth form with the name 'elephant's teeth' and then later acquired the ribbed form similar to celery ribs, according to some from Tuscany, effectively supplanting the original name. Sedani Rigati go well with elaborate sauces such as meat and mushroom ragùs, or sausage ragùs, but are also excellent in the preparation of baked or simple tomato and basil pies.
