Zite, locally also known as Boccolotti, originate from Southern Italy and especially from the Neapolitan territory. They have an elongated shape with a 7 mm diameter round section. As tradition has it, this pasta should be hand broken in bits before being tossed into the boiling cooking water. Zite are delicious in baked casseroles and in dried pasta dishes with thick coloured sauces made with either meats or fish, enriched with spices, tasty cheeses such as pecorino, provolone or caciocavallo. Vegetable and tomato sauces with peppers, aubergines and courgettes make an excellent alternative.
