Geca Capicollo Dolce Bianco is made from the upper part of the pork loin, carefully deboned by hand, massaged with salt, and left to rest for several days to begin the natural curing process. Once ready, it is gently seasoned with aromatic spices, then encased, tied using traditional cane and string, and aged for approximately 90 days.
This slow maturation process produces a firm yet tender texture, with balanced marbling and a delicate, slightly sweet flavor. The result is an elegant charcuterie cut that celebrates Italian craftsmanship and purity of ingredients.
