Caserecce are a typical pasta of Puglia, have a particular shape: wrapped around themselves like small rolls of parchment, folded towards the tip in a characteristic "gutter" which collects the sauce right down to the last drop. The dough is made using slow bronze drawing semolina and water from Monti Lattari which allows the pasta to be porous and so to better soak in sauces.
