Mezzi Paccheri are a short, smooth tubular pasta with a large diameter and is typically from the area around Naples. The name comes from "paccare" which means slap probably because of its thick and heavy consistency. The unusual cut, typically made only in the area around Naples, can be served with everything from cream sauces to chunky vegetables sauces. It can be cooked along with calamari to make a single dish. The dough is made using slow bronze drawing semolina and water from Monti Lattari which allows the pasta to be porous and so to better soak in sauces.
