Penne are amongst the more famous and popular pasta shapes, arising from the Campania region in southern Italy. The extremities of this tubular pasta are cut diagonal to look like quill pens. Penne is one of the most versatile pastas as it compliments most types of sauce, both creamy and heavy, plus al forno (oven-baked) dishes. The dough is made using slow bronze drawing semolina and water from Monti Lattari which allows the pasta to be porous and so to better soak in sauces.
