Parmigiano Reggiano has been called "the King of Cheeses". It is a medium fat hard Italian cheese made from partially skimmed unpasteurised cow's milk. It has a fine grain and contains no more that 33% water. The origins of this cheese date back to around the xII century. Aged for 24 months is has a Protected Designation of Origin status.
