Panuozzo is shaped like a large sandwich, made with bread baked in a wood-fired oven but prepared with the same dough as pizza. The inside of the panuozzo is stuffed with mozzarella, other dairy products, tomatoes, various vegetables and sliced meats. Compared to pizza, it is peculiar in that it requires a second baking, immediately before consumption, after the filling has been made, in order to heat the filling ingredients and mix them with the bread.
A typical panuozzo topping is with sausage and friarielli.
