Cotechino Modena is a seasonal sausage, usually enjoyed during Christmas and New Year's. Made from pork, fatback and pork rind, it is traditionally served on New Year's Eve with lentils to bring good luck or potato puree.
Pure pork seasoned with salt and spices encased in pig's gut and cooked. Characterized by a mixture consisting of lean meat and prime cuts of meat fat. The flavour is delicate and sweet with a slight spicey taste.
Cotechino must be cooked, usually boiled at low heat.
